I don't think anyone else even knew who he was except me so people were like wtf. I kept my head down but he stood next to my row of seats.

Actually, this is PR 101 stuff. Denying romantic involvement with someone more famous is one of the most common tactics celebs use to get ink. It is also the first step toward building up suspense for a PR relationship. So to use this Sophia / Josh thing as an example, the next move would be for them to be seen together again, for there to be another "are they or aren't they" story in Star or US Weekly, and perhaps another denial OR maybe a "no comment." Then the third time a "source close to the couple" might confirm that they have been "quietly spending time together and getting to know one another."

That didn't happen with Topher Grace story, and most likely won't happen this time either. So it is OK to presume that Sophia isn't desperate enough to use fake relationships to get publicity.
